The preparation method comprises the following steps: adding a small amount of citric acid aqueous solution into phospholipid-containing vegetable oil serving as a raw material, mixing at a high speed to form a vegetable oil-citric acid uniform system within a short time, stirring the mixture at a medium speed at 45-85 DEG C, adding a small amount of sodium hydroxide aqueous solution after stirring, mixing at a high speed to form a uniform emulsion system within a short time, and thus obtaining the phospholipid-containing vegetable oil emulsion. And separating the mixture by a centrifugal machine, and carrying out vacuum desolventizing and drying on a light-phase separated substance to obtain degummed oil.
