Stirring and mixing the sa-hao seed gum solution and the soybean protein isolate solution to obtain a sa-hao seed gum-soybean protein isolate mixed solution; adding a certain amount of glycerol into the artemisia glue-soybean protein isolate mixed solution, stirring for a certain time to obtain a film forming solution, drying the film forming solution to form a film to obtain a composite film, cutting a proper amount of the composite film, and soaking the composite film into an anthocyanin solution to obtain the self-assembled anthocyanin composite film. The quick response indicating film with strong color development is obtained in a self-assembly mode.
