The ship exhaust monitoring method comprises the following steps of: S1, judging whether a ship in the ship lock is in a static state or not, and if so, recognizing a ship chimney exhaust port; S2, determining an exhaust emission diffusion smoke plume gradual change area in combination with the air flow parameters of the current environment of the ship; and S3, controlling an exhaust detector to move to the geometric center of the exhaust emission diffusion smoke plume gradual change area so as to detect the exhaust smoke plume concentration in real time, and calculating the current fuel oil sulfur content of the ship according to the exhaust smoke plume concentration. The ship exhaust monitoring method has the advantage of being capable of effectively, comprehensively and automatically monitoring the sulfur content of the current fuel oil of inland ships.
