Zusammenfassung:The invention discloses a long-term refrigeration method of fresh breast milk, and belongs to the field of food preservation. The method comprises the followings steps: an emulsifying agent is added into the breast milk, and a homogenizing means is adopted to assist the refrigerator in refrigerating the breast milk; the four indexes of the acid odor, the pH value, the titratable acidity and the free fatty acid during the breast milk refrigeration period are respectively determined, and the results show that when the breast milk refrigerated by the method is used for more than 3 days, the fatty acid related indexes are mutated, the deterioration delay rates of all the indexes are more than 40%, and the average delay rate is more than 70%.
