Zusammenfassung: | The invention provides a method for monitoring a preparation process of an oat fermentation extract, which comprises the following steps: by taking oat as a fermentation substrate, firstly inoculating anaerobic bacteria for anaerobic fermentation to obtain fermentation liquor, and then inoculating aerobic bacteria into the fermentation liquor for aerobic fermentation to obtain the oat fermentation extract, wherein the oxygen consumption rate, the dissolved oxygen concentration and the ethanol concentration in the tail gas of the fermentation tank in the aerobic fermentation process are monitored and regulated by adopting an electronic nose, so that the ethanol generation concentration in the fermentation liquid is controlled to be not higher than 310ppm.
