Zusammenfassung:The invention discloses a preparation method of fermented rice flour, which is prepared by using broken rice screened out in a rice processing process as a raw material, and comprises the following steps of: cleaning the broken rice with baking soda water, sequentially soaking the cleaned broken rice with an edible alkali solution and a tea polyphenol solution, taking out the soaked broken rice, draining, and air-drying the drained broken rice with hot air; mixing the dried broken rice with crushed peanuts and sesame powder, adding bacterial powder and water for fermentation, and performing solid-liquid separation to obtain a solid matter and fermentation liquor; mixing the solid matter with early indica rice, adding fermentation liquor and water, performing soaking and secondary fermentation, performing solid-liquid separation after fermentation, drying the solid matter subjected to solid-liquid separation, and performing crushing and grinding to obtain the fermented rice flour.
