Zusammenfassung: | The invention provides a selenium-rich flavor peptide separated from selenium-rich seaweed, a preparation method and application. The method comprises the following steps of: (1) performing segmented enzymolysis on seaweed meal by using a biological enzyme to obtain enzymatic hydrolysate; (2) performing ultrafiltration separation treatment on the enzymatic hydrolysate to obtain a mixed flavor peptide; and (3) performing reversed-phase high performance liquid chromatography purification separation on the mixed flavor peptide to obtain a target flavor peptide. The flavor peptide has an amino acid sequence shown as SEQ ID NO: 1. The flavor peptide provided by the invention has an obvious flavor effect, can simultaneously present a fresh taste and a sweet taste, is low in threshold and high in purity, can be applied to multiple branches in the field of foods, and can improve the nutritional value of the foods while improving the flavor of the foods.
