The purification method comprises the following steps: firstly, cleaning and sterilizing a purification tank; seawater is injected into the purification tank for sterilization; the seawater salinity is adjusted to be 90% +/-2% of the sea area salinity of the original oyster culture area; after the oysters are pretreated, the oysters are purified, wherein the pretreated oysters are put into seawater in a purification pond to be purified for 68-72 hours. The purification method provided by the invention is simple, convenient and beneficial to implementation, and solves the problem that the flavor of the uncooked oysters is not good after the uncooked oysters are purified at present. 本发明提供了一种生食牡蛎的净化方法,包括首先净化池进行清洗杀菌;再净化池中注入海水并进行杀菌;调节海水盐度为牡蛎原养殖区海域盐度的90%±2%;牡蛎的预处理后进行牡蛎净化:将预处理的牡蛎放入净化池中的海水中净化处理68h-72h。本发明提供了一种简便利于施行的净化方法,且解决了目前生食牡蛎在净化后风味不佳的问题。
