The euphausia superba oil steady-state emulsion gel is prepared through the following steps of 1, preparing a protein-polysaccharide aqueous solution with the mass ratio of protein to polysaccharide being 1:(1-8) and the ratio of the total amount of the protein and the polysaccharide to the mass volume of a solvent being 0.5-10 g/100 mL; (2) drying the protein-polysaccharide aqueous solution into powder, and carrying out heat treatment; (3) using the protein-polysaccharide powder to prepare a water-phase solution according to a mass-volume ratio of 0.2-10g/100mL, and fully conducting dissolving and hydrating; and (4) adding the astaxanthin algae oil into the aqueous phase solution, and fully conducting emulsifying until the system is uniform and stable to obtain the euphausia superba oil steady-state emulsion gel.
