Zusammenfassung: | The invention provides normal-temperature soybean fermented milk as well as a preparation method and application thereof. The preparation method comprises the following steps: (1) heating soybean milk, performing homogenizing for the first time, performing mixing with a stabilizer solution, performing volume metering, and performing homogenizing for the second time to obtain an unfermented base material; (2) sterilizing the unfermented base material, obtained in the step (1), then adding a fermentation strain for fermentation, and performing cooling to obtain a fermented base material; and (3) performing volume metering, performing post-treatment, performing homogenization and performing sterilization on the fermented base material obtained in the step (2) to obtain the normal-temperature soybean fermented milk.
