The anthocyanin series beverage is prepared from the following ingredients in parts by weight: 0.4 g of anthocyanin extract, 2.0 to 15.0 g of white granulated sugar, 0.05 to 0.40 g of sodium bicarbonate, 0.02 to 0.20 g of citric acid, 0.012 g of sodium citrate, 0.010 to 0.015 g of sodium benzoate, a proper amount of essence and 0.005 g of vitamin C. The anthocyanin has different colors under different pH values, the stable shelf life can be provided, and meanwhile the interestingness of color change of the functional beverage is highlighted. 一种花青素系列饮料及其制备方法，包括如下配料及重量份：花青素提取物0.4g，白砂糖2.0g～15.0g，碳酸氢钠0.05～0.40g，柠檬酸0.02g～0.20g，柠檬酸钠0.012g，苯甲酸钠0.010g～0.015g，香精适量，维生素C 0.005g。本发明既能展现出花青素在不同酸碱度下的色彩，又能提供了稳定的货架期，同时突出了功能性饮料色彩变换的趣味性。
