Zusammenfassung: | The invention belongs to the field of processing of instant foods, and particularly relates to instant rice and a making method thereof. The instant rice is prepared from the following raw materials in parts by weight through an extrusion granulation process of 80 parts of basic powder and 10-50 parts of acetylated distarch phosphate, wherein the basic powder comprises rice flour and an emulsifier, and the rice flour is prepared by crushing rice and/or broken rice. According to the instant rice disclosed by the invention, the basic powder and the acetylated distarch phosphate are compounded, so that the product has better taste and rehydration rate, the reheating time is shortened, the internal quality of the product is improved, and the requirements of the market on fashion and quality of instant rice foods are met.
