Zusammenfassung: | The invention relates to the technical field of food processing, and discloses pumpkin powder with a low glycemic index and a preparation method and application thereof. The method comprises the following steps of: (1) cleaning, peeling, sectioning, removing pulp and seeds, slitting, and then mashing tissues to obtain pumpkin slurry; (2) performing high-voltage pulsed electric field treatment on the pumpkin slurry; (3) sequentially freezing and unfreezing the product obtained in the step (2); (4) repeating the step (2) and the step (3), and performing secondary high-voltage pulsed electric field-freeze thawing treatment; and (5) performing vacuum drying and crushing to obtain the pumpkin powder.
