The preparation method comprises the following steps of: carrying out enzymolysis processing on fructus lycii normal juice to obtain enzymolysis liquid, and adding sugar into the enzymolysis liquid, and carrying out capacity determination and homogenizing to obtain fermentation base materials; carrying out pasteurization and fermentation processing on the fermentation base materials to obtain fermentation liquor; and adding auxiliary materials into the fermentation liquor, and carrying out homogenizing after capacity determination to obtain the fermented fructus lycii juice. The preparation method utilizes fructus lycii raw materials to a maximum degree, the prepared fructus lycii juice is good in stability, has a refreshing taste, is soft in sourness and sweetness and has the unique fragrance of the fructus lycii.
