Zusammenfassung:The invention provides a method for preparing high-fiber fermented bean curd juice by a liquid fermentation method, which comprises the following steps: 1) adding water into dry soybeans, adding cellulase, soaking, grinding into thick liquid, and carrying out pulp-residue separation; 2) steaming the separated bean dregs, adding the steamed bean dregs into the soybean milk obtained in the step 1),grinding, heating and boiling; 3) cooling to 85-90 DEG C, adding magnesium chloride brine, performing standing to generate tofu pudding, pouring the tofu pudding into a mold, and pressing out yellow serofluid to prepare a whole bean curd blank; 4) cooling the bean curd blank to below 40 DEG C, uniformly spraying the mucor microbial inoculum on the bean curd blank, and fermenting until mucor hyphaeare densely distributed on the bean curd blank to obtain mao-tofu; and 5) adding ingredients into the mao-tofu, mixing, grinding, filling into a fermentation tank, and sealing for fermentation.
