Zusammenfassung:The invention belongs to the technical field of biological fermentation, and discloses a process for optimizing a nitrogen source in xanthan gum fermentation by using bean dreg enzymatic hydrolysate.The process is characterized by comprising the following steps of 1) smash and steam explosion, 2) microwave acidolysis, 3) acidolysis, 4) enzyme deactivation, centrifugation and concentration, and 5)preparation of a xanthan gum culture medium. According to the invention, the bean dregs are treated to obtain the enzymatic hydrolysate, and the enzymatic hydrolysate can partially or completely replace yeast extract. The difference in the gel production efficiency and the quality is small, and the fermentation cost is greatly reduced. 本发明属于生物发酵技术领域,公开了一种利用豆渣酶解液优化黄原胶发酵中氮源的工艺,其特征在于,所述工艺包括如下步骤:1)粉碎和蒸汽爆破,2)微波酸解,3)酸解,4)灭酶、离心以及浓缩,5)制备黄原胶培养基。本发明通过对豆渣进行处理获得酶解液,能够部分或全部取代酵母膏,产胶效率和品质差异并不大,但是大幅降低了发酵成本。
