Zusammenfassung: | The invention discloses a ginkgo biloba extract microcapsule with high antioxidant ability, a preparation method and application of the ginkgo biloba extract microcapsule. The ginkgo biloba extract microcapsule provided by the invention is prepared from a core material and a wall material in a mass ratio of 1: 5-1:10. The core material comprises a ginkgo biloba extract. The wall material comprisesmaltodextrin, soybean protein isolate and arabic gum, wherein the mass ratio of the maltodextrin to the soybean protein isolate is 1:1-1: 2; the maltodextrin and the soybean protein isolate form a component A; and the mass ratio of the arabic gum to the component A is 1: 4-1: 6. According to the gingko microcapsules prepared by the invention, the concentration of flavone from the gingko extract in an aqueous solution is increased to 3.5%, and antioxidant ability is enhanced.
