Zusammenfassung: | The invention discloses an extraction method of acanthopanax senticosus anthocyanin. The extraction method comprises the following steps: taking non-lignified purple tender shoots of an acanthopanax senticosus plant, drying and crushing to obtain acanthopanax senticosus powder; regulating the pH value of an ethanol aqueous solution with a volume concentration of 60% to be 3 +/- 0.5, and taking theethanol aqueous solution as an extraction solvent; adding the extraction solvent into the acanthopanax senticosus powder, and then carrying out ultrasonic extraction under a water bath condition; andafter the ultrasonic extraction is finished, cooling to room temperature, and centrifuging to obtain the supernatant containing acanthopanax senticosus anthocyanin. A new anthocyanin source is obtained.
