Zusammenfassung: | The invention discloses a process method for preparing soybean protein vegetarian meat by using a double-screw extruder, and belongs to the field of food processing. The process method comprises the following steps: (1) preparing defatted bean flour, (2) preparing soy isolate protein, and (3) mixing the soy isolate protein with the defatted bean flour, adding water to obtain mixed bean flour withthe moisture content of 30%, performing extruding by a double-screw extruder, and performing drying in a hot-blast stove for 3 hours to obtain a vegetarian meat product. The soybean protein vegetarianmeat can well simulate texture characteristics of meat products, and has taste similar to that of meat, so that the purpose of replacing meat products is achieved.
