The method for recovering the protein in the Ipomoea batatas [L.] Lam amylum production byproduct comprises the following steps of: adding alkali into pomoea batatas [L.] Lam waste liquid precipitation upper-layer yellow paste of which the solid-to-liquid ratio is 1: 45-55, controlling pH to be 9-10, and carrying out alkali dissolution on the protein; and after the protein is subjected to the alkali dissolution, adding acid to control pH to be 3.5-4.5, and carrying out acid precipitation on the protein.
