Zusammenfassung: | The invention discloses a method for extracting anthocyanin from fresh plant fruits. The method is a method for extracting anthocyanin from fresh plant fruits through enzymolysis combined with ultrasonic treatment. According to the method, cellulase, pectinase and xylanase are used for carrying out enzymolysis on fresh plant fruits, and compared with a single enzyme, the compound enzyme can be used for greatly improving the extraction efficiency of anthocyanin, shortening the enzymolysis time and meeting the requirement of large-scale production; besides, a mixed solution of choline chloride,1, 2-propylene glycol and oxalic acid is used as an extraction solution, and compared with traditional ethanol extraction, the extraction efficiency of anthocyanin is improved. The invention providesa new and effective method for extracting anthocyanin from plant fruits, and provides a technical means for further promoting research and application of plant anthocyanin.
