Zusammenfassung:The invention discloses a processing method of walnut flower snack food. The method includes the following steps: (1) weighing walnut flowers, heating and blanching the walnut flowers with purified water, and taking the walnut flowers out after blanching; (2) weighing the blanched walnut flowers to put in the purified water to form a mixture, adding amomum tsao-ko, star anise and salt into the mixture, performing boiling for 10-15 min, and taking the walnut flowers out to filter for later use; (3) weighing soybean oil, Sichuan pepper, pepper and sesame, pre-heating the soybean oil to 100+/-5 DEG C, and successively adding the Sichuan pepper, the pepper and the sesame to refine into oil juice for later use; and (4) uniformly stirring the processed oil juice and the walnut flowers, and adding the salt, monosodium glutamate, soy sauce and vinegar to uniformly stir so as to obtain the walnut flower snack food.
