Zusammenfassung:The invention relates to the biological field, and specifically relates to phosphorylated ovalbumin and a method for researching improvement of functional characteristics of daidzein by virtue of thephosphorylated ovalbumin. The method comprisesthe following steps: (S1) mixing a solution containing ovalbumin with a solution containing phytic acid, regulating pH to be 4, carrying out volume fixation, carrying out freeze drying to obtain a mixed solution, heating the mixed solution, and carrying out phosphorylation, so as to obtain the phosphorylated ovalbumin. The invention further provides the method for researching the improvement of functional characteristics of daidzein by virtue of the phosphorylated ovalbumin.
