Zusammenfassung: | The invention discloses a preparation method of a cod protein-based gel food, which comprises the following steps: by using Atlantic cod meat as a raw material, carrying out heating treatment to makethe relative extraction rate of myofibrillar protein to be 10% or below, thereby obtaining prefabricated fish meat; adding water into the fish meat, and crushing the fish meat into paste by using a colloid mill of which the treatment granularity is 1-3 microns; carrying out physical modification on the paste to obtain a slurry, wherein the particle size of protein particles in the slurry is 100-2000nm, and the average particle size is 100-1500nm; and cooling the slurry to 0-20 DEG C to obtain the cod protein-based gel food; wherein the physical modification is pressure shearing or homogenizing. The prepared gel food can be solidified and formed at the temperature lower than 20 DEG C, has certain flowability after entering the mouth, and is not prone to choking.
