Zusammenfassung:The invention discloses a method for preparing ultra-stable temperature-sensitive nutrient oil foams through molecular assembly and application. The method comprises the following steps: preparing medium-long-chain diglyceride; adding a medium-long-chain diglyceride/sitosterol mixture into plant oil, performing heating and stirring to completely dissolve the mixture, further rapidly cooling the mixture, and leaving the mixture to stand for a certain period of time so as to form an oil gel; and stirring or inflating the obtained oil gel by using a bubbling device, so as to form oil foams. The temperature-sensitive nutrient oil foams prepared by using the method disclosed by the invention can be converted into a liquid state at a specific temperature, and have good temperature sensitivity; in the foam preparation process, no large-size equipment is needed, the environment can be protected, no pollution can be caused, the cost is low, complex procedures are avoided, and production is easy; and used raw materials
