By adopting the detection method disclosed by the invention, the to-be-detected sample is only subjected to single test with no need for limitation of the detection sample portion to determine whether the to-be-detected sample is dead slaughtered beef or slaughtered beef. 本发明通过对血红蛋白残留和过氧化物酶活性进行双标检测,同时测定待测样本中过氧化物酶的浓度C以及血红蛋白的浓度C,通过公式R=C/C*100%,获得R值,并通过收集大量的因不同病因、不同部位的死宰牛肉的数据,确立了R值的标准阈值,从而完成了对死宰牛肉的判定的绝对标准。采用本发明的检测方法,仅对待测样品进行单次实验,不受检测样本部位的限制,就可以确定待测样本是死宰牛肉还是屠宰牛肉。
