A preservation number of the yarrowia lipolytica strain is GDMCC No:60782, and the yarrowia lipolytica strain is preserved in Guangdong Microbial Culture Collection Center of Guangdong Institute of Microbiology at 5th floor, building 59, No.100 Xianlie Middle Road, Guangzhou. The low-sugar and low-fat shredded coconut stuffing nutrition powder is prepared through the steps: a shredded coconut stuffing and water are mixed and heated; then,the heated shredded coconut stuffing is pulped, an obtained coconut pulp is homogenized, a pH value is adjusted, sterilization is conducted, and a coconut suspension is obtained; the cooled coconut suspension is inoculated with a culture solution of the yarrowia lipolytica strain, and fermentation is carried out; and an obtained fermentation broth is sterilized, subjected to spray drying and thensmashed, and the low-suga
