Zusammenfassung: | The invention discloses a black lemon production method and equipment thereof. The method comprises a pretreatment step and a fermentation step. The pretreatment comprises the following steps: a cleaning step: placing lemons in a bearing box, and cleaning the peels of the lemons with a large amount of pure water; a soaking step: soaking the cleaned lemons in pure water, vinegar, saccharomycetes ora mixture of sugar and salt, and soaking for 2-5 hours at normal temperature; and a draining step: putting the lemons on a bearing box, and draining the lemons; a fermentation step comprising a first-stage fermentation step of placing the lemons in an environment with the temperature of 60-85 DEG C and the humidity of 80-100% for 15 days, a second-stage fermentation step of placing the lemons inthe environment with the temperature of 50-70 DEG C and the humidity of 40-70% for 15 days; and an air-drying step: air-drying the lemons for 30 days to generate a plurality of black lemons.
