Starch, water and salt are uniformly stirred and mixed according to food soup proportion to obtain starch slurry, thestarch slurry is placed into an alternating pulse electric field, current passes the starch slurry through electrodes, each mass point of the slurry emits heat by itself, the starch slurry is heatedup, and the starch absorbs water, expands and is gelatinized when the temperature of the starch slurry reaches the gelatinization temperature of the starch to form uniform and viscous starch slurry soup. Besides, the invention further provides a device applied to starch slurry gelatinization.
