The method comprises the following steps: cleaning fresh chilies, carrying out baking at low temperature, then carrying out differential pressure drying treatment, putting the dried chilies into an extraction kettle to carry out continuous extraction treatment, and separating chili residues from chili extract liquor for later use; carrying out superfine grinding on the chili residues, carrying out vacuum freeze-drying treatment on the chili extract liquor, and embedding the chili residues and the chili extract liquor with pectin to obtain the chili microparticles.
