Method for judging grade and baking degree of Wuyi cinnamon tea

The invention relates to a method for judging a grade and a baking degree of Wuyi cinnamon tea. The judging method comprises the following steps of step 1), preparing a sample solution by using a teasample to be tested: preparing a first sample solution for physical property analysis; and preparing a second sample solution for metabolite extraction and UPLC-QqQ-MS analysis; step 2), acquiring detection information: measuring the first sample solution by adopting a conductivity meter, an acidimeter and a spectrophotometer, and measuring 9 parameters including a pH value and a conductivity value; and measuring the second sample solution by adopting a liquid chromatography-triple quadrupole gas chromatograph-mass spectrometer, measuring the contents of 14 amino acids and 11 polyphenols, andconstructing detection information of main flavor substances of different grades and baking degrees of the Wuyi cinnamon tea; and step 3), judging the grade and the baking degree according to whethercorresponding parameters of
