Zusammenfassung: | The present invention relates to the technical field of food industry and particularly relates to a high-stability eicosatetraenoic acid grease microcapsule powder and a preparation technology thereof. A formula of the high-stability icosatetraenoic acid grease microcapsule powder is composed of the following raw materials in mass percentages: a core material comprises 25%-35% of grease; and a wall material comprises 15%-25% of an embedding main material, 6%-8% of an emulsifier, 1%-3% of an antioxidant, 0.1%-0.2% of a thickener, 0.4%-0.6% of buffer salt and 29.2-52.5% of a filler. The preparation method improves melting point of grease in the eicosatetraenoic acid grease microcapsule powder, improves stability of the product, reduces smell of the product, provides help for increasing a proportion of the product in milk powder, and indirectly improves quality and shelf life of the milk powder.
