Zusammenfassung: | The invention provides a method for improving protein hydrolysis degree in flaxseed meal. The method comprises the following specific steps: (1) crushing and sieving the flaxseed meal to obtain flaxseed meal powder; (2) mixing the flaxseed meal powder with H2O to obtain a mixture, and carrying out ultrasonic treatment on the mixture; (3) adjusting a pH value of the mixture subjected to the ultrasonic treatment to 3.5-4.5, and then carrying out degumming treatment on the mixture; (4) centrifuging the mixture subjected to the degumming treatment, collecting precipitates, and then mixing the collected precipitates with H2O to obtain a sample liquid; (5) adjusting a pH value of the sample liquid to 7-10, then adding a complex enzyme into the sample liquid to perform a water bath enzymatic reaction, and finally terminating the enzymatic reaction.
