Zusammenfassung: | The invention discloses a method for preparing dried orange peel from red shaddock peel. The method comprises the following steps: 1) taking fresh red shaddock, splitting the peel of the red shaddock,removing bottom white sponge, keeping the red shaddock peel with the thickness of 0.3cm, and cutting the peel into strips; 2) soaking in salt water: soaking the red shaddock peel in salt water with asalt content of 2 percent for 7-8 hours when the room temperature is more than 25 DEG C, and soaking the red shaddock peel in salt water with a salt content of 3 percent for 5-6 hours when the room temperature is 25 DEG C or below; 3) performing rinsing with clear water to remove the salty taste of the red shaddock peel, and then performing airing; and 4) soaking the aired red shaddock peel by using the boiled ice syrup.
