Zusammenfassung: | The invention relates to a method for identifying the brewing characteristics of sorghum variety grains. The method comprises the steps of: removing impurities and shells of sorghum grains, performingsoaking, dry steaming and wet steaming, counting crushing conditions and cooking liquor forms, and determining whether the detected sorghum variety grains are suitable for brewing wine and brewing the type of liquor or not. The method has the advantages of short time, less material consumption, more samples processed at one time, obvious characteristics, easy identification and the like, and canbe used for identifying and screening sorghum breeding materials and identifying the cooking and fermentation characteristics of the sorghum samples purchased by wineries.
