Tertiary carbon-containing glucoside compound and preparation method thereof

The invention discloses a tertiary carbon-containing glucoside compound and a preparation method thereof. The structural formula of the tertiary carbon-containing glucoside compound is shown as below,wherein P is H or Ac, and R is shown as the followings. The preparation method comprises reacting tetraacetyl-substituted glucose bromide with alcohol to obtain tetraacetyl-substituted glucose; removing acetyls from the tetraacetyl-substituted glucose to obtain the tertiary carbon-containing glucoside compound. The preparation method prepares the t tertiary carbon-containing glucoside compound with a fragrance of oranges and tangerines by combining glucose and the tertiary carbon-containing alcohol; the prepared tertiary carbon-containing glucoside compound is high in stability as well as good in water solubility. 本发明公开了一种含叔基碳原子的葡萄糖苷化合物及其制备方法。所述葡萄糖苷化合物的化学结构通式为：其中，P为H或Ac，R为制备方法为：四乙酰基取代葡萄糖溴代物与醇反应得到四乙酰基取代葡萄糖苷；四乙酰基取代葡萄糖苷脱除乙酰基得到葡萄糖苷化合物。本发明利用葡萄糖与含叔基碳原子的醇结合制备了具有柑橘香味的葡萄糖苷化合物，所得化合物不仅具有高稳定性，且具有良好的水溶性。
