The high-sensitivity fiber grating electric field sensor comprises an upper metal hemisphere and a lower metal hemisphere; a sensitization amplification mechanism, an optical fiber and an insulating plate are arranged between the upper and lower metal hemispheres; through the two metal hemispheres, electric field signals are sensed; and the design of the sensitization amplification mechanism uses an inverse piezoelectric effect and amplification type sensitization combined method, so that the sensitization effect is more obvious.
