The preparation method of the Long-you-gan comprises the following steps: feeding pulp, and carrying out sieving; carrying out curdling; allowing expansion so as to obtain curd; uniformly breaking the curd; carrying out pouring, carrying out wrapping with a cloth, and allowing standing; carrying out squeezing and molding; carrying out cutting and placing; performing squeezing on cut pieces, and carrying out molding; carrying out cooking with alkali, and carrying out cooling; carrying out marinating; carrying out cooling, sorting and framing; and then, carrying out packaging and warehousing.
