The brewing technology comprises the following steps: selecting raw materials; smashing raw materials; soaking raw materials; steaming ingredients in clear soup; wetting rice grains; steaming in clear soup; mixing with yeast; fermenting and steaming. After raw materialsare fully mixed with ingredients, the mixed steaming manner is adopted, so that reaction between raw materials is more uniform and dense, reaction is sufficient and the acquired liquor has more pure and strong fragrance and taste.
