The method comprises the following steps of: (1) acquiring fermented milk as a calibration setsample, analyzing and detecting the calibration set sample by adoption of a plate count method so as to obtain a measured value of lactic acid bacteria number, and converting the measured value into alogarithm value, so as to establish a basic database, synchronously carrying near-infrared spectrum scanning on the calibration set sample to record near-infrared spectrum data, so as to establish anear-infrared spectrum database, and enabling the basic database to correspond to the near-infrared spectrum database to establish a lactic acid bacteria number calibration model; (2) verifying the calibration model; (3) carrying out near-infrared spectrum scanning on a to-be-detected fermented milk sample to obtain near-infrared spectrum data, importing the data into the calibration model and carrying out conversion to obt |
