The invention discloses a product classification conveying device and method. The classification conveying device comprises a device seat and a variable baffle. The upper end of the device seat is provided with a transmission roll. An angle is arranged between the transmission roll and a longitudinal axis of the device seat. The lower end of the device seat is transversely provided with a variabletransmission roll bracket. The lower end of the variable transmission roll bracket is provided with a cylinder, and the upper end is vertically provided with a plurality of variable transmission rolls. When the variable transmission roll bracket moves up and down driven by the cylinder, the variable baffle can move up and down under the action of a variable connecting rod, and the displacement direction of the variable baffle is opposite to that of the variable transmission roll bracket.
