Zusammenfassung:The invention discloses a method for detecting amylase in a production process using xanthan gum as a raw material. The method comprises the following steps that 1, a buffer solution is prepared; 2, blank control is set, wherein the blank control is prepared from glucose, the buffer solution and a starch solution; 3, a sample to be detected is prepared, wherein the glucose, the buffer solution andthe starch solution are added after a xanthan sample to be detected is selected for cooling, and even mixing is executed to prepare at least three parallel samples; 4, culture is executed, wherein the blank control and the sample to be detected are put in a constant temperature culture device for culture; 5, result judgement is executed, wherein the blank control and the sample to be detected areboth taken, an iodine solution is added, even shaking is executed, the iodine solution is added into the blank control for dark brown developing, if at least one developed color in the sample to be detected is same as or simi
