The thermostatic evaporator comprises at least threelayers of evaporator single sheets arranged at intervals in the longitudinal direction and cold air shielding structures; each layer of the evaporator single sheet is formed by evaporation pipes in acirculating and bending mode, the evaporator single sheet located on the bottommost layer directly communicates with the evaporator single sheet located on the topmost layer, a refrigerating agent inlet is formed in the opening end of the bottommost-layer evaporator single sheet, and a refrigerating agent outlet is formed in the opening end of one layer of the evaporator single sheet located between the bottommost-layer evaporator single sheet and the topmost-layer evaporator single sheet; and the cold air shielding structures are arranged on one layer of the evaporator single sheet or multiple layers of the evaporator
