Zusammenfassung: | The invention discloses a method for removing walnut seed coat, belongs to a nut processing method; and aims to provide a method for quickly and effectively removing the walnut seed coats. The methodcomprises the following steps: carrying out lye soaking by freezing the fresh walnut seeds for 2-3 h, then spraying the walnut seeds with steam for 15-20 min, immersing the sprayed walnut kernel intohot lye prepared from compound phosphate, Na2CO3, and NaOH, and conducting soaking for 20-30 minutes; and rinsing the soaked walnut seeds with water with certain pressure to a neutral state, and thendrying the walnut seeds. By the method of the invention, the seed coat removal rate can reach 98% or above, protein content of the processed walnut seeds can reach 15.938%, and the loss is not high; the method can quickly remove the walnut seed coats.
