The invention discloses an angelica sinensis processing method capable of reducing oil and retaining grease. The angelica sinensis processing method capable of reducing the oil and retaining the grease comprises the steps; (1) wetting: adding a liquid auxiliary material to clean angelica sinensis; decompressing and coldly leaching an obtained mixture; after the liquid is completely absorbed, finishing the cold leaching when the water content is 20%-40%wt; (2) slicing: slicing the wetted angelica sinensis; and (3) frying the sliced angelica sinensis with soil: firstly, frying processing soil toa flexible state, secondly, putting the sliced angelica sinensis into the processing soil, and thirdly, stirring and frying till fine soil is full of the angelica sinensis, and finishing the soil frying when the water content is 6-15%.
