Zusammenfassung: | The invention discloses a processing method of preserved figs and relates to the technical field of processing of preserved fruits. The processing method of preserved figs comprises the following steps: selecting fig fruits 70-80% in maturity, thoroughly cleaning the fig fruits and pricking the surfaces of the fruits; (2) performing color protection, specifically, putting the figs in boiled waterand performing blanching, then putting the figs into a color fixative and soaking the figs, and fishing out and draining off the figs; (3) pickling the figs with table salt, performing extruding and draining off moisture; (4) adding the figs into a 20-25% sugar solution, performing immersing, fishing out the figs, then regulating the concentration of the sugar solution to be 30-35%, then adding the figs, performing boiling, then performing natural cooling and immersing, and fishing out and draining off the figs; and (5) baking the candied figs until the figs are not sticky to hands.
