Zusammenfassung:The invention discloses a process for processing marinated peanut kernels. The process comprises the following steps: a, screening peanut kernels; b, washing the peanut kernels; c, cooking the peanutkernels, namely boiling water, cooking the peanut kernels into a pot containing the boiled water, cooking the peanut kernels for 5-10 minutes after the water is boiled, taking out the peanut kernels from the pot, and keeping the ratio of peanut amount and water being 1:8; d, performing marinating, namely immediately putting the peanut kernels which are taken out from the pot after cooking in the step c into a marinating pot filled with marinating materials, performing soaking and marinating for 15-20 minutes at a normal temperature, and keeping the ratio of cooked peanut kernels to the marinating materials being 1:6; and e, cooling the dried peanut kernels, and instantly packaging the peanut kernels.
