Zusammenfassung: | The invention relates to a method for preserving freshly-cut potato chips with garlic extract, in particular to a method for preserving the freshly-cut potato chips the garlic extract by the aid of preservation treatment of compound preservative prepared from a variety of reagents. The method includes: after crude extract of garlic is extracted, mixing the crude extract with substances of soybeanprotein isolate, tea polyphenol, nicotinamide and the like; adjusting pH value with citric acid to obtain the compound preservative; soaking the potato chips subjected to pretreatment in the compoundpreservative for preservation treatment; adopting vacuum package and performing refrigeration under suitable conditions. The compound preservative prepared from the reagents serves as the preservativeof the freshly-cut potato chips, preservation effect is good, the shelf life can reach more than 2 months, and problems about browning, hardness decrease and microorganism increase and the like of fresh potato chips are solved |
