The method includes: selecting Sichuan pickled green vegetables as the raw materials, conducting cleaning and selection, then putting the selected Sichuan pickled green vegetables into a jar for high salt salting, then conducting desalting and dewatering, loading the product into a seal bag for vacuum packaging, then conducting ultrahigh pressure sterilization, and then moving the product into a low salt fermentation stage, and according to the characteristics of the selected direct vat set lactobacillus plantarum fermentation preparation, conducting fermentation for 3-4 days.
