Zusammenfassung: | The invention discloses a deep processing method of flavored horse mackerels and a product thereof. The method comprises the following steps: (1) selecting refrigerated fresh horse mackerels; (2) performing thawing and treatment to obtain treated fish bodies; (3) performing slicing layer by layer along the back bones of the fish bodies to obtain fish fillets; (4) picking out impurities from the fish fillets; (5) repeatedly rinsing the fish fillets cleanly with deodorizing water and then fishing out and draining the fish fillets; (6) soaking the fish fillets with a soaking solution to enable the fish fillets to be sufficiently and uniformly soaked; (7) drying the fish fillets and allowing the fish fillets to stand for a period of time after drying to obtain dried fish fillets; (8) putting the dried fish fillets into a plastic tray, transferring the plastic tray into a freezing chamber and performing quick-freezing; (9) picking out residual bones; and (10) performing packaging.
